Kathal ki Biryani
Kathal ki Biryani is prepared from carefully selected, squishy and plump Indian jackfruits and naturally aromatic rice. This biryani is absolutely vegetarian, not a substitute for meat but an original vegetarian recipe, developed after a necessity of its invention.
About four hundred years ago, when the first Nawabs came to Hyderabad, they were startled by the country’s absolute vegetarianism. Impressed by this uniqueness of Indians, their Khansamas developed a new dish. Kathal or jackfruit pioneered the use of vegetables and fruits in biryanis. Now our ‘Edison of Food’ (Petu-Pankaj) worked out a hundred (plus one) ways to get closest to the original method that would extract the best of the flavours, soften the flesh of the jackfruit and finally load it with the steamed-rice that would just rain down, each grain separately. There is a perfect combination of spices and herbs to fit into the jigsaw of bland chewiness of Kathal and strong aroma of rice.
