Tandoori Batair are well marinated and seasoned quails, roasted slowly on tandoor. The marination is done in spiced thick yogurt that contributes to the yummy browning of the crust. Quail has a natural salty taste and the flesh is deep pink, soft and supple. A thick batter of curd is prepared with lots of spices and the quail flesh is left to be marinated deeply. When the flesh absorbs the marination, it is then grilled in a tandoor on a slow heat. The slow heat and constant rotation allows the meat to be cooked evenly. The crust is well charred and becomes very crisp with the delicate effort of Petu Pankaj. Later the Batair pieces are seasoned with special masala and then served hot with mint sauce and lacha onions.
